It definitely works
It definitely works, but it can be confusing if you are not aware of what some of the services do to prevent having multiple numbers. WhatsApp will try to prevent you from making a new number on the same phone. Just have to use another phone to create the account and then you can sign in properly. I was confused why I kept going through so many numbers not working, but it was because I was using the same device that I recently had an account on. I deleted my previous account, but WhatsApp saves your device info for 30 days.

Your phone must support eSIM and be carrier-unlocked. Dial *#06# to look for an EID. An EID shows that your phone supports eSIM.
Yes, your own SIM stays in your phone with its existing number. Your Laos eSIM supplies data only, and WhatsApp can keep using your existing number.
Your own SIM receives SMS, not your Laos data eSIM. Keep that SIM turned on for incoming codes. Delivery depends on your home provider and the sender.
Your phone needs a hotspot feature to share mobile data. A connected laptop uses the same data allowance, so sharing can use up your allowance sooner.
Your fixed bundle gives you a set amount of data. Once that runs out, you need another data plan to continue using mobile data in Laos.
You can buy another plan for the rest of your stay. Pay from your prepaid account balance. The new plan starts on its first connection in Laos.
