It definitely works
It definitely works, but it can be confusing if you are not aware of what some of the services do to prevent having multiple numbers. WhatsApp will try to prevent you from making a new number on the same phone. Just have to use another phone to create the account and then you can sign in properly. I was confused why I kept going through so many numbers not working, but it was because I was using the same device that I recently had an account on. I deleted my previous account, but WhatsApp saves your device info for 30 days.

Your phone must support eSIM and be carrier-unlocked to use these plans. Dial *#06# and look for an EID, which identifies your phone’s eSIM support.
Yes, you keep your own SIM and number for calls and SMS. Your Norway eSIM supplies data only, and WhatsApp can keep using your existing number.
Bank texts use your existing number, not your Norway data-only eSIM. Keep your own SIM active for incoming SMS; this eSIM cannot receive verification texts.
Hotspot sharing uses mobile data from the phone providing the connection. Connected laptops and tablets draw from that same data allowance while you use them.
You can buy another plan using your prepaid account balance. The new purchase provides a QR code and manual activation code for its eSIM profile.
You can buy another plan for the extra part of your trip. Its validity starts on first connection, so buying it does not start the clock.
